Plants of this type outwardly resemble cauliflower, but are distinguished by a characteristic greenish hue of the head, although purple and orange variants are also encountered. Since the term is descriptive in nature, there are no uniform agronomic characteristics for these hybrids, such as maturity periods or disease resistance.

In cooking, these hybrids are used similarly to cauliflower and broccoli: they are consumed fresh, stewed, or used for preparing soups. When purchasing seeds under this name, it is necessary to clarify the original name of the specific hybrid, as any breeding form may be marketed under it.
