The Harold’s St. Barts variety is a late-maturing plant with a ripening period of 90–100 days. The bush reaches a height of 60–75 cm. The fruits have a length of 4–6 cm and a width of 2.5–4 cm; during the ripening process, their color changes from light green to golden yellow.
The fruits are characterized by high pungency of about 130,000 SHU on the Scoville scale, medium flesh thickness, a distinct citrus aroma, and smoky notes. The variety is primarily used for making hot sauces, seasonings, and dry powders.
