The Arlatan variety was developed as a result of induced mutagenesis work carried out by the INRA research station in Montpellier. The Arlésienne variety served as the original form for the creation of the variety.

The variety is intended for commercial cultivation and research purposes. Breeding work on its creation was aimed at changing morphological parameters, including stem height, tillering, maturity time, as well as resistance to lodging, grain shattering, and fungal diseases.
