The Prometeo variety was obtained by crossing Ardizzone and Raffaello. The grain has a semi-round shape, a length of about 5.7 mm, a width of about 3 mm, and a white pericarp color. The variety does not hold its shape very well when cooked and is not intended for classic risotto; it is best suited for soups, minestrone, and desserts.

The Nuovo Prometeo variety was developed by the same institute to combat drought. Its key difference is the presence of a developed vertical root system, which allows the plant to withstand prolonged moisture deficits, while the culinary use remains similar to the original variety.
