The variety is a whole-grain unpolished rice. The grains contain anthocyanins, which stain the starch dark purple during cooking. With an amylose content of approximately 1%, the variety is classified as glutinous; the texture remains soft and slightly sticky after cooking while the grains retain their shape.
The product has a distinct nutty aroma with notes of sandalwood or fresh bread. The composition includes fiber, antioxidants, and trace elements, including calcium, iron, magnesium, zinc, and selenium. The variety is intended for food use, in particular for the preparation of risotto and side dishes.
