The name Valdarno is used to designate local ecotypes of common bean originating from the Arno River valley. These are heirloom varieties that have been preserved by local farmers for centuries and belong to the category of grain varieties with variegated seed coats of the Borlotto type.

A typical representative of the group, Borlotto del Valdarno, is a bush bean with a maturity period of about 90 days. The plants are upright and sturdy. The seeds have an elongated shape and a light brown base color with characteristic burgundy speckles and stripes.

Characteristic features of these ecotypes are a very thin skin, a creamy texture of the flesh after cooking, and good digestibility. In a number of cases, breeding work has been carried out by academic institutions, such as the University of Pisa, with the aim of preserving and improving varietal qualities.
