This group of plants includes a number of forms, such as Arnad, Arnad-Crest, Châtillon, Entrebin and Perloz. They are characterized by a high degree of adaptation to difficult growing conditions in mountainous terrain.
The plants have cobs of sub-rounded or cylindrical shape with small hard flint-type kernels. The color of the kernels varies from yellow to dark red, with some forms having a 'beak' on the kernels.
Historically, these maize varieties are used in local cuisine, in particular for the preparation of the traditional dish polenta.
