In the first year of Witloof chicory's life, the plant height is determined by the size of the basal leaf rosette, which indirectly reflects vegetative vigor and influences the development of the root crop suitable for subsequent forcing. In the second year of life, the crop produces flowering stems, the height of which, when measured from the soil surface to the apex, varies from 110 to 190 cm.

In breeding practice, according to UPOV guidelines, measurements are carried out on a representative sample of at least 60 plants. During the production of the target product, the chicons, their height serves as an important varietal trait influencing weight and commercial appearance, and under standard conditions, it ranges from 12 to 16 cm.
