The Zolfino variety is a landrace from the Umbria region in Central Italy, which has historically been cultivated under low-input farming conditions. The plant belongs to the sprouting broccoli type, allowing for the harvest of both the main head and subsequent side shoots.

The variety is late-maturing; low winter temperatures are required to induce flowering. The harvest period occurs between the beginning of March and the middle of April.
