Testa di negro is a traditional Italian local variety (landrace) of red cabbage. The variety belongs to the late-maturing group; the period from transplanting to harvest is about 100 days.
The heads have a round shape, characterized by a dense structure and large size. The average head weight varies from 1.5 to 2 kg. The variety is intended for fresh consumption as well as for various types of culinary processing, including stewing and fermenting.
The cultivation technique for the variety involves limiting fertilizer application and controlling the irrigation regime during the phase when head formation begins.
