The Di Bruxelles variety, known as Belgian endive, is a classic variety for forcing. The plant forms dense, conical heads of white color that possess a delicate taste and are consumed both fresh and after culinary processing.

Cultivation is carried out in a two-year cycle: in the first year, root crops are obtained, which are harvested in autumn for subsequent forcing in dark and cool rooms. The forcing process at a temperature of 10–15 °C takes from 3 to 5 weeks. The variety is traditional, maintaining its qualities through seed propagation.
