Głąbik krakowski is an ecotype characterized by a reddish tint of the stems with green leaves. The plant reaches a height of 70 cm, but for consumption it is harvested at a height of 25–30 cm and a stem diameter of 3–4 cm, before the formation of flower stalks.
The growing season is 10–14 weeks. The crop is cold-resistant, needs fertile soil and abundant watering. The edible part is the peeled fleshy stem, which is consumed fresh, fried, stewed, and also used for pickling and fermenting.
