The Mikonos variety belongs to the Iceberg type and is used in commercial vegetable farming; specifically, it is cultivated in the Murcia region of Spain.
Product quality studies show that this variety is highly susceptible to tissue browning during minimal processing. When storing the sliced product for seven days at 5°C, high activity of enzymes that trigger oxidative processes is observed.
