The Ducato variety belongs to the temperate japonica group and is characterized by a round grain shape. One of the key features of the variety is its ability to germinate intensively under low-temperature conditions, approximately 15 °C.

The variety is being studied in the context of resistance to fungal diseases, in particular rice blast caused by the pathogen Magnaporthe oryzae. In culinary use, this rice is intended for preparing traditional dishes, including risotto.
