The Ermes variety is a hybrid bred in Italy. The grain of the variety belongs to the brown rice type; it has a natural red color due to its high anthocyanin content.

The rice has an intense aroma with notes of wheat, spices, and green tea. During cooking, the grains retain their shape; the cooking time varies from 15 to 45 minutes depending on the method.
