Centofiamme beans belong to the Borlotto group, which determines their appearance: light-colored seeds with a characteristic reddish-brown streak pattern. This variety is considered part of the Stregonta cultivar type and represents a climbing or semi-climbing plant form.

The primary purpose of the crop is for use as a dry bean for subsequent drying and long-term storage. In cooking, the variety is valued for its soft texture and nutty flavor, which the seeds retain after heat treatment.
