The variety is a small plant. A key feature is the seed color: they remain green if the crop is harvested at full seed maturity, but before the pods dry in the sun. Upon complete drying, the seeds turn white and lose their specific flavor.
The beans are used in cooking, primarily in Asturias and Galicia. Due to their organoleptic properties, this type of bean is traditionally used in preparing dishes with seafood and fish.
