The variety belongs to the group of flat-podded Romano-type beans. Pods of the Moncayo variety were used in experiments to study the influence of blanching and canning processes on the activity of the enzyme pectin methylesterase and cell wall strength.

In comparative trials studying resistance to the pathogen Pythium leak, the yield of this variety showed no advantages compared to the control variety Roma II.
