The genetic modification of the Vegaspeso tomato is aimed at reducing the level of the enzyme polygalacturonase, which is responsible for the degradation of pectin in cell walls. This technological solution allows fruits to maintain integrity and quality for longer during transport and subsequent processing.

The product is intended exclusively for industrial cultivation and the production of tomato products, such as pastes and sauces. Due to increased density and preservation of the pectin structure, these tomatoes require less energy for the evaporation of raw materials during processing.

This hybrid is not a variety for private gardening, and its characteristics are oriented toward controlled conditions of the agro-industrial complex. Tomatoes of this type were used for the production of goods that became one of the first commercially available GM products on the market.
