The variety Mammouth is mid-late, with a ripening period of about 150 days. The plant is biennial: in the first year it forms a leaf rosette and root crops, and in the second year it produces a flowering stem 60 to 120 cm tall.

The root crops have a cylindrical shape, a smooth surface, and a creamy-white color. They are distinguished by a delicate taste reminiscent of oyster or asparagus. It is important to harvest before flowering begins, otherwise the roots become tough and fibrous.

The plant is adapted to a temperate climate and requires deep, well-cultivated soils. The root crops are used in cooking boiled, fried, in soups and salads. The plant is also grown for decorative purposes due to its purple flowers.
