In sugar beet cultivation, classification by maturity group has been replaced by a hybrid typology (E, N, Z) based on productivity trends. The primary indicator of readiness for harvest is technical maturity, characterized by maximum sugar accumulation and root weight.

Sugar beet hybrids are classified based on the ratio of yield to sugar content into types E (high-yield), N (normal), and Z (high-sugar), as well as their intermediate combinations. The choice of type determines the harvest sequence strategy: high-sugar hybrids are effective for early harvest dates, whereas high-yield types show an advantage during late harvesting due to prolonged root mass accumulation.

Technical maturity represents a physiological state of the plant with maximum sugar content and slowed growth, visually manifested by the yellowing and senescence of some leaves. The degree of maturity is determined by regular analysis of sample plots from July to October. It is important to distinguish between technical maturity and bolting, which is not a varietal trait but a pathological deviation that reduces raw material quality.
