The ability of tomato fruits to maintain their marketable quality after harvest, determined by the genetic characteristics of tissue structure and physiological metabolic processes.

The shelf life of tomato fruits is evaluated through a complex of methods, including visual monitoring of the preservation of market appearance, instrumental measurements of peel firmness and resistance to crushing, as well as biochemical analysis of pectin substances and calcium content. The physiological storage potential is related to the respiration rate of the fruits and ethylene production.

High shelf life is genetically determined by the presence of specific mutations, such as nor and rin, as well as morphological features of the fruit: a multi-locular structure, thickened pericarp, and small-celled structure of the epidermis. Low shelf life is characteristic of varieties with accelerated cell wall degradation.
