In maize grain, oil is distributed unevenly: about 60% of the total fat content is concentrated in the embryo, while the fat content in the endosperm is extremely low, at approximately 0.6–0.7%. Breeding efforts to increase maize oil content are primarily aimed at increasing the proportion of the embryo in the kernel structure, which allows for improving the chemical composition without significantly reducing the starchy part.

A high fat content increases the energy value of maize in livestock diets and is also a key factor for the starch and syrup industry. At the same time, higher oil content complicates grain storage processes, requiring strict control of drying and ventilation regimes to prevent product spoilage.
