Sowings for long-term winter storage are carried out in the second ten-day period of May or in June, as overly early dates can reduce the shelf life of root vegetables by 15–30%. Summer sowing dates are used to obtain a second crop, which often provides more consistent quality for storage.

Carrots are a cold-resistant crop whose seedlings can withstand frosts down to -5 °C; however, optimal germination requires soil temperatures from +8 °C. For early sowings, it is critical to utilize soil moisture reserves, while for late sowings, irrigation is required. Late-autumn (pre-winter) sowing at a soil temperature of +5 °C allows for an extra-early harvest, but excludes the possibility of long-term storage due to the biological characteristics of the crop.
