Early-maturing variety, ready for harvesting scallions 25–30 days after planting, and bulbs in 70–80 days. Leaves are tubular, narrow, 20 to 40 cm tall. One cluster forms 4 to 30 rounded bulbs weighing 25–50 g each. Outer scales have a golden or brownish-red color; the flesh is succulent, white or pale pink.

The variety possesses resistance to bolting and common fungal and bacterial diseases. Winter hardiness allows it to withstand temperature drops down to -20...-30 °C. Bulbs are distinguished by a sweet, mild flavor and high keeping quality, maintaining consumer characteristics for up to 7–8 months of storage.

Bistro is used as a universal variety for cultivation for greens in greenhouses and open field, as well as for bulb production. The produce is suitable for fresh consumption, culinary processing, and pickling.
