The variety belongs to the leaf chard type, which is grown exclusively for its greens. Unlike stalk varieties, it lacks thick fleshy petioles, and its main value lies in the tender leaves with a smooth or slightly bullate surface.

The plant is characterized by a rapid growth rate: harvesting is possible as early as 6 weeks after sowing. The variety has high resistance to bolting, which makes it possible to harvest the produce even during the summer period. Due to its ability to regrow quickly after cutting, it is often used as an alternative to spinach.

It is used in cooking for preparing salads, stewing, boiling, and fillings. Since Erbette is a traditional variety, seeds may be released by various producers, because of which the characteristics may vary slightly.
