Variety description

The plant does not form a head, has a strong stem, and can reach a height of 1 to 2 meters. The leaves are large, fleshy, and dark green in color. The harvest is collected in stages, starting from the lower tiers, which stimulates further plant growth.

The variety possesses high winter hardiness and is capable of withstanding temperature drops down to -10 °C. During the winter-spring period, small heads, called Piochon, may form in the leaf axils.

Historically, the crop is used as feed for livestock. In cooking, the leaves are used in soups and stews. There is a breeding variety Cavalier Vert Protéor, adapted for gardening and human consumption.
