The Jariza variety was obtained by individual selection from a local pepper population, Agridulce de La Vera. It belongs to the Ocales group of varieties and is intended primarily for industrial processing. The plant has a specific habitus, and the fruits are distinguished by an intense color, which ensures high quality of the final product when smoked over oak wood.
This pepper can be used for the production of both bittersweet and hot types of paprika. The crop is sensitive to waterlogging and requires regulated irrigation. The variety is officially included in the regulations governing the production of products in the La Vera region, Cáceres province, Spain.
