The Castellano-type chickpea belongs to the large-seeded Kabuli category. The grains have a spherical shape, a rough surface, and a 100-seed weight of approximately 47 g. In culinary terms, this type is distinguished by increased firmness after thermal processing compared to other traditional varieties.
The plant is a product of centuries of folk selection and is adapted to the conditions of regional cultivation in Spain. The produce is used in the food industry, including the production of chickpea flour, and has a high content of protein, fiber, and carbohydrates.
