The variety has its historical origin in the La Armuña region in the province of Salamanca. The grains are characterized by a small size (6–7 mm in diameter), almost spherical shape, smooth surface, and the presence of a distinct 'beak'. The color varies from cream to light yellow or brownish.
During culinary processing, Pedrosillano grains are distinguished by a delicate taste and thin skin, which becomes almost imperceptible after cooking. The product retains its shape integrity without boiling apart and is traditionally used in the preparation of stews, soups, ragouts, and salads, as well as in the canning industry.
