The variety belongs to the escarole type and forms a voluminous, dense head rosette. The leaves are distinguished by a crisp texture and a reduced content of bitterness compared to other types of endive. One of the key features is the plant's heart ability to acquire a golden-yellow or white shade during the ripening process.

The plant belongs to late-ripening varieties and is sensitive to frost. The produce is intended for fresh use in salads or for culinary processing, including braising for side dishes. The variety has a number of synonyms, such as Gele Volhart and Bionda a cuore pieno.
