The St. Laurent variety forms a large open rosette with a diameter of up to 30–40 cm. The leaves are predominantly light green, deeply cut, with a lighter, sometimes creamy-yellow heart. In some cases, the variety is identified with the Fijne Krul Groen variety or classified as part of the broad-leaved endive group.
The plant is resistant to early bolting and tolerates cold well, which allows it to be grown in spring and autumn periods on various types of soil. The leaves have a crispy texture and a mild flavor with a characteristic bitterness. The variety is suitable for fresh consumption in salads, as well as for heat treatment.
