Ithaca variety plants form dense and compact heads. The leaf blade is distinguished by deep and dense incisions along the margins in the upper part.
The variety is late-maturing, with a maturation period of 80–95 days. The leaves possess the characteristic crispy texture of iceberg lettuce, and the heads maintain density during storage.
The crop is intended for open field cultivation; organic or peat soils are preferred. In breeding programs, the variety is used as material for increasing resistance to sulfonylurea herbicides.
