The variety is a cultivated form of apple selected and included in the regional register of protected varieties. It is included in the list of varieties officially approved for the production of cider with the Protected Designation of Origin (DOP) Euskal Sagardoa.

The fruits are classified as bitter due to their high content of phenolic compounds and tannins. Thanks to this characteristic, Mikatza apples are used in blends with acidic and sweet varieties to balance the flavor of the final product. The trees are characterized by good adaptation to the local agro-climatic conditions of the region.
