The Albufera variety is a short, rounded rice with a pearlescent color. It was bred in Spain as an alternative to traditional varieties, combining the ability to absorb broth flavors characteristic of the Sénia variety with the high resistance to overcooking typical of the Bomba variety.

After cooking, the grain retains its shape and texture, remaining firm on the outside and achieving a soft, creamy consistency on the inside. The rice is suitable for preparing classic paella, soupy dishes, and risotto, and holds the Arroz de Valencia Protected Designation of Origin status.
