The Italico variety, also known as «Italico R.» or «Italico Roncarolo», belongs to the semifino rice category. The grains have a medium size and a rounded or semi-elongated shape. The variety has the ability to absorb sauces well and maintain its shape during cooking, which is why it is traditionally used for making croquettes (suppli), timbales, and side dishes.

The variety is associated with rice farming in the Baraggia region and the activities of breeder Giovanni Roncarolo. The maturity period is approximately 109 days. The variety was historically valued by farmers for its adaptability to heavy soils and cold climates, and it was also studied for genetic resistance to rice blast (Pyricularia oryzae).
