The grain of this variety has a medium-large rounded shape and a pearlescent hue. The plant is adapted to the Mediterranean climate and is cultivated in flooded fields in regions of Spain, such as the Ebro River delta, the Albufera de Valencia park, and the marshy areas of the Guadalquivir.
When cooked, the variety releases a significant amount of starch, providing a creamy texture to the finished dishes. The cooking time is 14–17 minutes. Due to its ability to intensively absorb aromas and liquids, the variety is optimally suited for soupy types of rice, risotto, and "meloso" style dishes, whereas in "dry" types of paella, the grains are prone to sticking together.
