Mercurio variety belongs to long-grain group B varieties. The milled caryopsis has a length of approximately 8.2 mm and a width of 2.2 mm with a length-to-width ratio of 3.7. The pericarp color is white, the endosperm is non-glutinous, and the variety is not aromatic.

The high amylose content ensures good resistance to overcooking and prevents the grain from becoming too soft. Cooking time is approximately 12 minutes. Due to its grain shape, which resembles Basmati-type varieties, Mercurio is oriented towards the preparation of salads, side dishes, and international cuisine.
