Under the Molinella trademark, Arborio variety rice is most often sold. It is a short-grain rice characterized by a high starch content, which becomes creamy and sticky when cooked, while maintaining an al dente texture.

In an agronomic context, the name is associated with studies of local rice populations conducted in the Po Valley, including an examination of their resistance to the fungus Magnaporthe oryzae and the nematode Aphelenchoides besseyi. Specific breeding characteristics for the Molinella variety are absent in scientific literature.
