The variety has a short (round) grain shape with a characteristic pearly-white center, caused by a high starch content. Due to its texture and ability to absorb the flavors of ingredients, the variety is used for preparing paella, risotto, and other Mediterranean dishes.

Montsianell is an autochthonous variety for the Ebro Delta region. In terms of agronomic characteristics, the variety is susceptible to rice blast. It is used in the food industry both in the form of packaged 'Extra' category grain and as a raw material for the production of processed products, including rice liqueur.
