Saint-Esprit, also known as Saint-Esprit à œil rouge, is a robust bush plant. The pods are green and flattened when young; however, as they mature, they quickly develop tough fiber, making them unsuitable for use as green beans at later stages.

The seeds of the variety have a white color and a noticeable dark red or brown spot at the hilum, the shape of which has given the variety alternative names such as "Nun's Navel." The grain harvest is distinguished by a delicate taste with chestnut notes. The variety is well adapted to traditional organic farming methods.
