Tarreste is a product of folk selection, cultivated for centuries in the conditions of the Peneda-Gerês mountain region. The variety is included in genetic resource conservation programs, including storage in plant resource banks and maintenance in farmers' fields by local cooperatives.
The bean seeds are small, kidney-shaped with thin skin. Within the population, there is great variability in colors: beige, white, yellow, chestnut, black, and red grains are found, both solid-colored and with mottled patterns.
The variety is grown within a traditional farming system, often in intercropping with maize. The product is characterized by a high content of dietary fiber and unsaturated fatty acids, which places it in the category of functional food.
