Carouby de Maussane is an indeterminate plant 90 to 180 cm tall, requiring the installation of supports. The variety is characterized by large bicolored flowers in purple-pink and violet shades and light green flat pods 7 to 15 cm long.
It belongs to mid-early or mid-season varieties with a vegetation period of about 65–70 days. The pods have a sweet taste and maintain a tender texture even when reaching large sizes due to the absence of a parchment layer.
The variety possesses resistance to powdery mildew, Fusarium wilt, and leaf roll virus. It is used for fresh consumption and is also frequently used in ornamental gardening.
