The wheat variety Imbros genetically carries the Glu-B1h allele, which encodes the glutenin subunits 1Bx14 + 1By15. These protein components significantly influence baking properties, determining the strength and elasticity of the dough, which is why the variety is often used for biochemical studies of grain quality.
