The variety belongs to soft wheat and is characterized by a hard grain texture and high test weight values. Under field conditions, the variety demonstrates high productivity, often acting as a high-yielding standard for Italy.

In the scientific community, Eridano is used for studying protein composition, molecular genetic analysis, and as a control sample when assessing susceptibility to pathogens such as yellow rust and powdery mildew. The resistance of this variety to air pollution by ozone has also been studied.

The variety is intended for baking and serves as a reference object for comparative studies of flour quality.
