The Forenza variety is classified as a spelt line (Triticum spelta L.) intended for cultivation in marginal areas of Southern Italy. The variety is included in the Italian national registry and is used as a genetic resource.
Technological studies of the baking quality of the grain have shown that Forenza spelt possesses acceptable characteristics for baking. In experimental trials, bread made from this variety had a less dense structure and a larger loaf volume compared to the Kamut wheat variety.
