Tritordeum is an artificially created hexaploid cereal obtained as a result of crossing wild barley (Hordeum chilense) and durum wheat (Triticum turgidum ssp. durum). The variety is adapted to various soil types, exhibits resistance to drought and salinity, which allows it to be grown in a Mediterranean climate, as well as in temperate climate conditions as a winter or spring crop. The plant is characterized by high resistance to diseases.
Grain of the variety Aucan contains about 19.5% protein and is distinguished by a high level of lutein, which gives finished products a golden hue. More than 90% of the grain has a size of over 2.2 mm. Products made from it are used in baking, the production of pasta, cereals, and malt. Although the variety is not gluten-free, it contains fewer immunogenic gluten epitopes than wheat.
