Breeding lines JB1 and JB3 were developed during the creation of this crop and were subsequently registered as commercial varieties. Line JB1 corresponds to the Aucan variety, and line JB3 to the Bulel variety.
Tritordeum is characterized by high resistance to drought, heat, lodging, and a number of diseases, including rust and Septoria. The grain is characterized by an increased content of the antioxidant lutein and protein, as well as a lower level of active gluten compared to wheat.
The crop is used in the production of bakery and pasta products, as well as in brewing. Products made from tritordeum have a characteristic golden color and a specific taste. Agronomically, the species is close to durum wheat, although the yield may be lower than that of traditional wheat and triticale varieties.
