Brussels sprout varieties and hybrids are classified into early, with a growing period of 120–150 days; mid-early, from 150 to 180 days; and late, requiring more than 200 days. The choice of maturity group is strictly limited by the length of the frost-free period in a specific agro-climatic zone.
Maturity determines the need for topping, which consists of removing the apical bud in late summer to redistribute nutrients to the sprouts. For late-maturing varieties, ripening occurs after the first frosts, which positively affects the flavor quality of the produce.
