The classification of tomatoes into maturity groups is based on the number of days from emergence to the beginning of harvest. In agronomic practice, varieties are categorized as ultra-early (75–85 days), early (90–100 days), mid-early (100–110 days), mid-season (110–120 days), and late-maturing (over 120–130 days). These values are relative and depend on agroclimatic conditions, the method of cultivation in open or protected ground, and the plant growth habit.

The choice of maturity group is a key element of planning, allowing production to be adapted to specific growing periods and market demand. In this process, the correlation between ripening time and biological properties is taken into account: early produce is often inferior to late-maturing varieties in terms of shelf life and sugar content. For mechanized harvesting, a key factor alongside the maturity group is the uniformity of fruit ripening, which is characteristic of determinate varieties.
